Serabai
If you are familiar with serabi cake in Java, in East Kalimantan serabi is also called serabai. Both serabi and serabai use rice flour, but the shape of serabai tends to be flatter and wider.
Serabai is more like a pancake than the thick serabi of West Java. The taste is quite savory and there is a distinctive aroma from burning using a wood stove. The way to eat it is sprinkled with sugar and folded in a banana wrapper.
Nasi kuning
Samarinda in East Kalimantan is famous for its yellow rice cuisine. In fact, there is a village called Kampung Nasi Kuning on Jalan Lambung Mangkurat, Samarinda City, as a gathering center for yellow rice sellers who operate from night to early morning.
This savory yellow rice can be eaten anytime with various side dishes such as balado eggs, chicken intestines, cork fish or meat.
One of the most famous yellow rice stalls is Mrs. Arbayah's Yellow Rice Depot in front of the East Kalimantan Provincial Health Office Laboratory No. 27. The yellow rice is more savory because it is cooked with thick coconut milk. The Balinese-spiced yellow rice is usually enjoyed with the addition of cork fish, boiled eggs, fried onions and serundeng.
Ayam cincane
Ayam cincane is made from free-range chicken seasoned with tamarind water, fried half-cooked, then cooked with coconut milk until it is slightly dry and absorbed into the chicken.
After that, the chicken will be sauteed with garlic, candlenut, ginger, galangal, salam and lemongrass. Add soy sauce, coconut milk, and then stir-fry. Finally, the chicken is grilled over hot coals until cooked.
This food is usually found at big events such as weddings and welcoming honored guests.
Pulut nasi
Pulut nasi is a typical East Kalimantan rice dish. It is made from rice and coconut milk and wrapped in banana leaves with a spicy vegetable filling similar to stuffed rice cake.
Pulut nasi has a soft and savory texture. Because it's made from rice, it's a great meal to fill your stomach when you're suddenly hungry. Besides being eaten just like that, pulut nasi can also be drizzled with spicy and savory peanut sauce.
